Ounces vs fluid ounces — they are not the same

This trips people up constantly, because both are shortened to "ounce" in speech. An ounce (oz) is a unit of weight: 28.35 g, what a scale reads. A fluid ounce (fl oz) is a unit of volume: 29.6 ml, what a measuring jug reads.

They line up almost exactly for water — 1 fl oz of water weighs about 1 oz — and that coincidence is why the two got the same name. For everything else they diverge, sometimes wildly. Eight fluid ounces of flour (one US cup) weighs about 4.25 oz, not 8 oz. Eight fluid ounces of honey weighs about 12 oz. If a recipe gives ounces for a dry ingredient it almost always means weight; if it gives ounces for milk, water or stock, it usually means fluid ounces. When in doubt, the presence of a "fl" or a jug in the instructions is the tell.

Why bakers work in grams

Grams win on two counts. First, no fractions: 340 g is one number, where the same quantity in imperial is 12 oz or ¾ lb, and every conversion step invites another rounding error. Second, resolution: a gram is small enough to measure yeast, salt and baking powder meaningfully, whereas ounce scales usually step in eighths — about 3.5 g — which is a large slice of a 7 g sachet of yeast.

Grams also make ratios legible. Once you can see that a bread dough is 500 g flour to 350 g water, you know it's 70% hydration, and you can scale it to any batch size in your head. That's why professional recipes and this site both lead with grams. To go the other way — from cups of a specific ingredient to grams — you need that ingredient's density, so pick it from the ingredient list.
